Default Dill and Lemon Shark Steak

I did not cook on Thursday because I had to work.
I had two dear friends over last night for dinner that I'd not seen in
nearly two years. One had been out of state for awhile attending to an
elderly mother...

Anyway, I'd originally planned to bake a ham (which I will still do
today) but my guests did not eat pork. <shrugs> I can respect that. ;-)
Their preferences run more to fish or fowl.

So instead, I bought some of the vac-packed shark steaks from the local
grocery store and served them with some veggies. They have been $3.99
per lb. for awhile now which is quite reasonable. I like shark. It's
mild and meaty flavored and there are NO bones! Cooked to just done, it
has a firm texture.

First I sauteed some scallions, thinly sliced celery and mushrooms in
some coconut oil and added some granulated garlic and salt free lemon
pepper. This produced enough juice, I then added some corn starch slurry
to make a nice glaze.

I was going to purchase some baby red potatoes as a starchy side, but I
ran across some two lb. bags of baby fingerling spuds on clearance for
$.99. :-) They were very pretty so I bought those instead. Steamed those
and coated them lightly with olive oil and some McCormick Italian spices
to make herbed potatoes.

The shark steak was marinated for an hour or so in Bragg's liquid
aminos. I heated up my Hamilton Electric grill, placed them on the
bottom and sprinkled them liberally with a mix of ground lemon peel and
dried dill weed, then laid some thinly sliced lime slices on top, closed
the grill and grilled for 3 minutes. The steaks were around 3/4" to 1"
thick.

I grilled 6 of them for 4 people.

They went back for seconds. :-) I always enjoy cooking for an
appreciative audience!

I was pleased at how the shark steaks turned out. Grilling them with the
lemon peel and lime slices, you could taste the citrus flavor pretty
much all the way thru the meat and there was a nice crusty texture on
top.

Today, I'll do the ham for dad and I along with some sweet potatoes and
I'll steam the baby bok choy that I did not end up using last night...
