![]() Today is the anniversary of NM's admittance to the Union as a state. Since we are discussing bread pudding in another thread, here is a recipe with which to celebrate. And no, it doesn't contain any chile! Capirotada (from:'Historic Cookery') 1 cup sugar 2 cups water 6 slices toasted bread 1 tsp ground cinnamon 1 1/2 cups grated cheese (cheddar, jack etc) 1 cup raisins 1 tbs butter chopped pecans (my addition) Caramelise sugar, carefully add water and cinnamon, boil until sugar is dissolved. Place a layer of bread in a (greased) casserole. Add cheese and raisins. Repeat until all ingredients are used. Pour syrup over mixture and dot with butter and pecans if used. Bake at 350 F until syrup is absorbed by the bread. |
