Thanks to both of you. With laser thermometers and induction hobs it is
getting a lot easier to be accurate about temperatures (I even have a
grill pan for steaks with a thermometer in it).
Hm, 325º Water drops dance on skillet surface

That's the vital one, it's pancake temperature!
