Default Beef soup under way

I saw Jesus at the St. Paul Winter Carnival. At 5:30 this morning.
He was having dinner with friends.
They looked cold‹icy cold!

I brought a print of the picture, "It's a murricle!" to church with me
to show to some folks. My pastor thought it was pretty good. A nice
old lady loved it and I gave her the print. Bless her heart.

On the way home I stopped at the co-op and picked up a piece of round
shank for soup. It's in the pressure cooker right now with some
carrots, parsnip, onion, carrots, celery, thyme, parsley, peppercorns,
allspice, garlic, and bay leaf. It'll be done in about 20 minutes.
I'll strain out the veggies and increase the volume of the broth with
some beef base. Sue me.

I pressure shanks for one hour to melt all that connective tissue.
You won't need to add beef base if you do that. <g> It'll have plenty
of flavor.

I just did two pressure cooker loads of sliced beef knucklebones this
weekend. They did not need any help.

I added carrot, celery, onion, garlic, white pepper and a bit of ground
lemon peel to brighten the flavors.

It turned out wonderfully and jelled up like you'd not believe! Made it
very easy to defat when I refrigerated it.

You have got to be completely out of your gourd to go outside when it's
that cold. Shame, shame on you, now I will be shivering all day. The
soup sounds good though, I'm having leftover lasagna and DW is going up
to the church for the horrible chicken and sausage gumbo the church
ladies make. She's gotta go, she's a member, I don't.

Okay, what the h*ll does that really mean? I NEVER heard it when we
live on the east coast, but midwesterners say it ALL.THE.TIME. (Bless
their hearts!) Nope, it doesn't ring true. Something you'd say with
gritted teeth when what you really mean is G.D. them?

This was just the broth. I'll add the barley and the mushrooms when I
make some vegetable soup.

I think it may be equivalent to "Wasn't that sweet?" Or perhaps an
acknowledgment of a well-meant but poorly executed gesture; e.g., "Bless
her heart, she tried to make cookies but left out the eggs and they were
hard as rocks."

example is, when someone was speaking of a dull-witted and good meaning
lad, was, "Bless his heart, he couldn't count past twenty with his pants
off." Something like that.

Yep, it's a southern thang. It's a way to damn with faint praise.
Anytime I hear that expression now, I start giggling to myself, if not
out loud.
