Default Hard Boiled Eggs

I have hard boiled a dozen eggs. I peel them by cracking the shell in
quite a few places and seperate it from the egg. Many times, including
today, the shell sticks to the egg and and it has to be pried off
often damaging the egg. Why does this happen only sometimes and what
can I do to prevent it in the future.

I find that happens more with fresh eggs. Are you running cold water
over them immediately after the boiling? I do that and add ice to the
pot they are in and not peel till they are cold.

Might help. I'm sure others in this group have far more "scientific"
ways of doing hard boiled eggs, but I think the biggest problems is the
freshness. Let 'em sit in your fridge a week or so before hard boiling.

Absolutely! When we do easter eggs, we make a point to get them at least a
week before we plan to hard boil them. (2-3 weeks in Japan!)

If you want to quick age eggs for hard boiling, just leave them out at
room temp for 2 or 3 days. They don't spoil, but it does make them
easier to peel.

Putting hardboiled eggs in the lunch we take to the beach is a
tradition in our household and, since it's summer Downunder, and we're
headed to the beach again today, I'm pretty clued up on this one.

Besides, who wants to spend the day picking pieces of shell off the
egg when you could be eating it instead?

We use a map-pin to put a small hole in the big end of each egg (helps
to keep the shells from cracking), then slowly put the eggs into a pan
of water we've just taken off the boil, then cook in gently boiling
water for 15 minutes, remove and put into a bowl of iced water until
they're cold. Works every time ...

If the eggs aren't going to be stored, crack the shells (immediately
after boiling) while cooling them in ice water. The shell never seems to
stick that way. And the green ring around the yolk is less likely to
form.
