Default Warm Spiced Limeade--RECIPE

This is tasty and warming.

Warm Spiced Limeade (Indonesia)
"Bandrek"

3 thick stalks lemongrass
2 cinnamon sticks, about 4" each
3 whole cloves
1 piece fresh ginger, 2 inches long, peeled and bruised
4 1/2 c. water
5 Tbsp. dark brown sugar, or more to taste
1/4 c. fresh lime juice or more to taste

Combine the lemongrass, cinnamon, cloves, ginger and water in a
saucepan. Bring to a rolling boil over high heat. Reduce heat to
medium, cover partially and allow the water to simmer until the steam
smells of the spices and the water is thoroughly infused, about 10 minutes.

Add 4 Tbsp. of the brown sugar and stir until dissolved. Remove the pan
from the heat, add the lime juice and stir well to combine. Taste--it
shouldn't be overly sweet or sour. Adjust the flavor with brown sugar
or lime juice. Remove and discard the seasonings, divide among 3
glasses or cups and serve hot. You can also serve cold, over ice,
garnished with mint sprigs. Makes ~3 servings.
