I've served many a crab meat Omelet. I like to keep things simple. :-)

Crab over linguine in an Alfredo sauce also works well.

Ok, sorry!

But as for Omelets, I've personally found that just about _anything_
goes! <g>

"Leftovers" Omelets are one of my favorite things.

I have really gotten into such omelets and egg mixtures too. Some
of the creations are wonderful. My favorite is made with the
vegetables left over from Thai Crazy Noodles. I saute them with
some roasted chile paste and then add egg....

This weekends leftovers will make some tasty egg mixes this week.
Add a bit of shredded cheese and off we go!

Veggies! A medley of carrots, onions and water chestnuts.
Maybe some shredded chicken drumstick meat too.

Oh yeah. You remind me of the joy of having roasted veggies around.

Well, we are supposed to get snow today, so I will stay here and
cook. Probably LC cheesecake.
