![]() Today is Dear Daughter's birthday. (You know her, she's Jeremy's sister.) She was born in CT on a day when an ice storm coated the streets with nearly an inch of ice. I called DH at work to meet me at the hospital and drove myself in a '68 VW Beetle. She and Dear Grandson went skiing yesterday with Dear Husband (mine--hers had to work) and they stayed overnight at Jeremy's house (remember him?) in the mts. to ski both days. I do 't ski till it's WARM, like March. I offered to have dinner for everyone when they got back tonight. It was pretty simple since I knew they'd be exhausted so I had a narrow window to feed them before they crashed. OB Food, for dinner: I roasted two chickens ~5 lb. each (sale $.99/lb) mashed potatoes ( a must for grandson when there's gravy) red garnet yam wedges, oven roasted with a homemade spice blend homemade lingonberry preserves from our Swedish partner asparagus, stir fried in butter and olive oil caprese salad (sliced tomato with mozzarella and shredded basil Dessert was a yellow cake with whipped cream (to fill the hollow where the cake fell while baking) and sliced fresh strawberries. Wine was choice of beaujolais or a tasty chenin blanc. They went home happy. gloria p |

He looked completely exhausted after two days of hard skiing, like he was having trouble keeping his eyes open after dinner. gloria p |

Nah, I got an email from her (surprisingly NOT on rfc) saying they decided it was too expensive for now since they mostly drink tea, anyway. BUT--listen up now-- Martha and I have decided to buy them one for Christmas jointly if they still want one. They are expensive, about $400 when we got ours, now almost double, probably due to the current exchange rate. Is that enough information? gloria p |

Okay... it was whole-wheat cous cous, with tofu, preserved
meyer lemon, leeks, celery, carrot, cooked in some vegetable stock and water and seasoned with Spanish smoked paprika, garnished with a few spanish lemon-stuffed olives and a couple dollops of ajvar. I added just a tiny amount of sea salt (not much necessary with the preserved lemon in there; but I do rinse the lemon). Also, some olive oil and a squirt of fresh meyer lemon juice before serving. This is easy, quick, impossible to screw up, and is a top-notch dish. It works with firm-cooked garbanzo beans instead of tofu. I imagine getting a chicken or lamb version going is no problem either, but I haven't yet tried that. Steve |
