Hey all,

anyone know of a source for good dried mushrooms that is either in
canada, or will ship to canada? ideally i'd like to get a larger
sized jar of mixed wild varieties... but if i have to buy a bunch of
different ones to combin myself that will work too. I used to be able
to buy a large jar at Costco here, but haven't been able to find them
lately. They are the perfect addition to the mushroom soups and
risottos i make, along with so many other things.

Google is your friend here - plenty of sources.

You can usually find dried mushrooms in an oriental market. If you live
in an area large enough to have a Costco there is bound to be one.

What kind of mushrooms are you looking for? I buy dried A-grade[important]
Italian Porcinis from my local Italian deli for $30/lb. You can't beat that
on the internet. I have purchased dried morels @ $80-$100/lb on e-bay
without any complaints. With morels you have to make sure you're getting
good sized mushrooms, not those little bitty ones. Many morels come from
Oregon, in addition to France. If you find an E-bay vendor with a 99%
positive rating you shouldn't go wrong.

Well what i've had before was a mix including morels, porcini,
shitake... and something else i can't remember. It had this lovely
smokey woodsey flavor, just a little went a long way.

The area i'm in doesn't have much of an asian.. or any other
ethnic.. .market. there are a few small asian groceries that i've
checked, but they didn't carry anything i can't get at the regular
grocery stores, surprisingly enough.

I hadn't really considered ebay... i guess that'll be my next try.
I've spent hours googling, but its hard to find a vendor that operates
or ships in canada, and even then i'd prefer to not fly blind... a few
recommendations can make all the difference.

for black mushrooms, sure. for other varieties, not so much, at least in
my experience.

i would google for on-line sources rather than rely on the vagaries of
e-bay. but possibly good deals can be had there, i don't know.

In your area and mine, Blake, the two Chinese supermarkets in Rockville,
Maxim's and Kam Sen, are good sources.

Their only named species is shiitake, OK for Asian dishes but not most
other. Their other mushrooms are just labeled "mushrooms"

I'd avoid a "mix". Each variety has its distinct flavor. Morels are quite
subtle. Dried porcinis are assertive. Fresh porcinis[when rarely available]
are quite delicate. For non Asian dishes I wouldn't use Shiitakes.
