Default About that Thai fried chicken...

While Lin and I both thought it was crisp and flavorful, we didn't think it
had much flavor of garlic, cilantro, or the other flavors in the marinade.
Next time I'll probably use the same marinade but then roast the chicken
instead of frying it.

i was thinking of broiling and basting with the marinade, but if you do
bake it, i'd be interested to hear how it turned out.

On the grill with basted marinade would be nice, too.

I have so much cooked chicken to use this week! Leftover Thai chicken, a
couple of Chicken and Green Chile enchiladas, poached pick-of-the chick
that I used for stock yesterday, and then last night's French Chicken in
a Pot. Still a lot of stock left from yesterday. Maybe a soup of some
sort -- it is rainy today.

We had cornish hens before all of this.

That sounds so good....there is nothing better than an Cornish Game
hen w/ Orange Glaze....rice pilaf and asparagus. It presents an
elegant meal.

And Safeway had the Tyson hens with not preservatives, additives and
hormone free for .99¢/lb. Cheaper than chicken lately. I prefer cornish
hens -- especially on the grill -- more than most poultry.

It makes for great casual dining as well.
