We will never agree, so let's not make it a competition. Eat Wayne's his
way, and if you make mine, eat it my way and then you decide.
Just remember that it is not something to make way ahead and that simplifies
things a lot. I made 13 of them for a First Communion, and made them all
the morning before the party, so they were eaten within 6-7 hours. I rarely
have any left for longer than that, and certainly not if there are 6 or more
people and one pie.

I did some reading about this, and I found that it is the meringue they
worry about in the USA because their eggs are often tainted with salmonella
which might not be killed in the short cooking time.
We don't have that problem here, so I don't worry about it. Our eggs are
also much fresher, often only a day old when bought.

There is more than one issue here. This particular meringue is baked
differently than most meringues on top of pies. Because of the longer and
slower baking, it becomes more stable and far less likely to weep, or
become tough or gummy over a reasonable period of time.

Having said that, it is still important to bake it either the night before
or the morning of the day it will be served. The quality of even this
meringue will suffer with prolonged standing, either at room temperature or
in the refrigerator.

Although it is safe to leave the pie at room temperature, I have found that
most people prefer eating lemon meringue pie well-chilled. Personally, I
would not care to eat it at room temperature.

It's true that pies with meringue toppings should not be made too far in
advance for reasons already discussed here. I never thought to tell you
that. Some cookbooks will give that advice in their recipes.

Many years ago in the US, chocolate cream pie was also frequently topped
with meringue. It was also a nice combination. Today, however, most
chocolate cream pies are topped with whipped cream. I think more people
prefer that. Occasionally I still make a chocolate cream pie with
meringue, and serve it well-chilled.

In fact is still intact. Is outside the fridge because the kitchen is
without healing

of pie pans from 24 to 28 cm. Under 2 euro each.
