Default Need Baby Spinach Ideas

Good evening all,

OK, I bought this ginormous package of baby spinach at Costco because
it was the same price as a smaller one at my regular grocery. Now I've
made my intended recipe (Florentine eggs) with it, and have tons left.

What interesting recipes/ideas for spinach are there?I feel a little
uninspired for some reason and want input. I already have steaming/
sauteeing as a side dish and salads covered.

I've been on a baby spinach kick the last couple of weeks. Been eating
it mainly with ground beef but it also goes with just about anything
else. Eggs, cheese, chicken, etc.

I've been chowing down on it raw. I've gone thru nearly 3 lbs. over the
past 2 weeks.

nice in soups and salads also I have this recipe: the sauce isn't spicy
it is just called hot because it is served warm right from the pan.

Lamb In A Hot Garlic Sauce

none

1/2 lb spinach or any green vegetable
2 tablespoon vegetable oil
1/2 lb lean lamb, thinly sliced
4 cloves garlic,finely chopped
freshly ground white pepper
1/2 teaspoon sugar
1 tablespoon nuoc mam sauce
1 tablespoon oyster sauce
Optional Garnish
fresh sprigs of mint and/or
cilantro to garnish

Blanch the greens in boiling water for 1 minute. Drain and place on a
serving dish. Heat the oil in a wok and stir-fry the lamb until nearly
cooked. This should not take more than 2 minutes. Add the garlic, pepper,
sugar, Nuoc Mam sauce, and oyster sauce and stir-fry until the lamb is
completely cooked and tender. Pour the lamb and sauce over the greens.
Garnish with mint and/or cilantro.

Yield: 2 servings

Yes, and with the bacon fat, a bit of cider vinegar, a splash of
Worcestershire sauce, and a dash of Tobasco. I usually also add some
chopped scallions.

Spinach soufflé
Creamed spinach

A favorite of mine is to sauté a pound or two of spinach in olive oil and
garlic till wilted. Stir in salt, bread crumbs and fresh parmesan cheese.
Stir until all blended into a thick sauce. I like to serve it on top of
fried polenta.

When I have a glut of spinach I give it a quick wilt using only the
water left on it from washing and a little olive oil, then freeze it
for later use.

I'm a little unfamiliar with baby spinach.

Might I suggest a baby spinach/tomato/jack cheese omelet? Topped with a
spoonful of fresh grated Parmesan cheese and a handful of Tabasco drops?!?

Spinach
blue cheese or feta, crumbled
strawberries, peeled chopped pear or mandarin oranges (ie sweet fruit)
candied pecans or almonds
slivers of sweet onion (optional)
Brianna's blush wine vinaigrette dressing

(Or a classic spinach and bacon salad)

Our local Italian restaurant makes a wonderful double crust spinach
pizza. The spinach is lightly sauteed in olive oil and garlic,
spread on the crust, along with mozzarella and Parmesan and pitted
Kalamata olives. It is served with marinara sauce on the side for
dipping. Deeeelicious.

Actually I suppose you could prepare the stuffing and serve as a side
dish without the crust.

saag/palak (Indian cooking)
spinach and lamb stews
spinach and chickpea stews
filling for ravioli or large shells

steam it and freeze it until you think of what you want to make
(which is what we do)

I think the difference between them and crepes is the oil. I dunno.
I've posted the recipe before but as far as I know nobody has tried
it. It's always a hit.
