Default Today's lunch/dinner

DH worked ten till 2am last night and then he had to get up at six
this morning and go back to work. He's working tonight too, but at
some point he's going to come home to eat and sleep (at least a
little!) I lost my cellphone yesterday so I have no idea when he'll be
here, so I made a meal that can sit and wait for him.

I started with a packet of all-natural dehydrated tomato and rice soup
that you just added water to and simmered. I cooked it up and it was a
little watery, so I added a fresh tomato and some onion for more
flavour. Then I set it aside on the back of the stove (I figure the
longer the rice sits in the soup the better it'll taste!) I made some
mini-turkey meatballs with smoked paprika and fresh garlic and onion
and fried them in oil until they were crisp. Then I set them aside on
a plate in the fridge. And lastly I pan-fried some chicken breast and
put that in the fridge too. When DH gets home all I'll have to do is
to get out some bread and cook a couple of strips of bacon, and then
he can have a chicken-and-bacon-club sandwich, and a bowl of spicy
tomato and rice soup with mini meatballs. I hope he likes it!

Followup. The soup was pretty icky. I thought it would be okay because
it was 'all natural' and only dried vegetables and stuff but it tasted
instant. DH hated it and just ate the meatballs... he's a picky eater
so I tried it myself and I don't like it either! I hate wasting food
so I'll probably eat some tomorrow but it's not on my 'must have this
again' list by any means. I made some mini cornbread muffins and he
liked them... and I put the chicken and bacon into a pita and he liked
that too.
