Default ? What to do with nasty liqueurs

A bottle of Key Lime schnapps, and a *big* bottle of peach schnapps --
Mother's, I think. I don't remember why I bought the Key Lime, and the
peach was for a frou-frou drink that Wife wanted to try (don't ask) and
all I could find was a 1.75l jug.

I can see where it might be useful in place of simple syrup when
making... I can't think of anything specific. Help me out here? I
can't just throw away alcohol, gotta find a way to drink it or cook with
it. Thanks.

Don't know about the lime schnapps, but the peach schnapps should be
frozen to near slush and drunk from 100ml lab beakers...

Okay, a little bit of a stretch maybe, but perhaps use the Key Lime with
a fajita thing? And then the peach might go well with a pork tenderloin
maybe??? Just ideas. Go from there

Key Lime schnapps sounds icky.

Peach, OTOH, is very nice. A shot in a glass of orange juice
makes the 70's drink, Fuzzy Navel. A shot in a glass of champagne
makes a spicy faux bellini. Neither is too shabby!

I'm guessing that both liqueurs are very sweet. For the key lime schnapps,
I'd try putting it into a shot glass half-and-half with cocktail sauce and
adding a boiled shrimp which has been shelled and deveined: Shrimp shooter!

For the peach schnapps, the first thing which leaps to mind is the
ever-popular party dish *FLAMING HAM KABOBS*!

Yes, they are both kind of syrupy, but not in a good way.

The Key Lime is drinkable if I mix it with equal parts gin and bottled
lemon juice (proportions may not be quite right.) Tomorrow I'll try the
same thing with an inexpensive Canadian blended whiskey.

Unfortunately, neither is alcoholic enough to use for a flambe, so the
ham is out. :-D

Reducing them by heating would undoubtedly cause them to lose some of their
flavor anyway. If you can hang onto them until summertime, they'd be
excellent additions to ice cream (or sorbet) mixtures. A bit of alcohol
keeps ice creams from freezing too hard. Here are a couple more ideas:

Mix the lime schnapps with coconut milk and drizzle on a sliced mango.

Place a ham steak on a big piece of foil and sprinkle lightly with either
allspice, nutmeg, or cinnamon. Wrap foil around ham, but leave one end open.
Into the open end, pour a quarter-cup of the peach schnapps. Seal the foil
and cook at 250°F for 30 minutes. Open the foil and pour the liquid into a
pan over medium heat. Bring liquid to a boil and allow to cook for a couple
minutes, then add a cornstarch slurry, stirring to make gravy. Serve with
ham over cornbread or grits.

The peach liqueur could be used to deglaze the pan where you just
cooked some duck filet, don't you think?

Stir 1/3 cup of the lime stuff into a batch of peach jam at the end of
the cooking time. Or nectarine jam. Or apricot jam. Or blueberry jam.
Or strawberry jam. Dude!! You've got the makings for Boozeberry
Jam/Topping and you're letting it pass you by!

You could prolly use the peach stuff the same way with peach, nectarine,
apricot, strawberry, or orange marmalade. Think, Man, THINK!! You
could "brighten" the punch at the next church dinner - maybe the Easter
Brunch - with that peach stuff. Surprise 'em!! You might want to
transfer the contents to, say, an OJ container first, though.

Stick with me, Pal. I've got a million good ideas.

I don't know about "nasty" but liqueurs can be poured over vanilla ice
cream to the improvement of both. I haven't tried many of the herbal
liqueurs like Jagermeister but Drambuie does work,

Put a small amount in cups of hot chocolate per your personal tastes.
Also flavors coffee well.

Alternately, it's often good for baked goods.

Sorry Bob, but that one just made me GAG. :-P
Key lime shnapps should go just fine in baked goods, especially maybe a
whipped pie topping.

Back in the '70's, Peach Schnapps cakes were very popular..... about
the same time, Harvey Wallbanger cakes were popular also.

Peach Schnapps Cake

Cake
1 box deluxe French vanilla cake mix
3 eggs
3/4 C. orange juice
1/2 C. peach schnapps
1/3 C. canola oil

Glaze
1/2 C. peach preserves
2 Tbsp. peach schnapps

Optional extra topping
1 C. Cool Whip
2 tea. peach schnapps

Preheat oven to 350 degrees F. Grease and flour a 10-in. Bundt pan.

For the cake, combine cake mix, eggs, orange juice, peach schnapps and
oil in a lrg. bowl. Beat at med. speed for 4 min. Pour into pan. Bake
for 45 to 50 min. or until tested done. Cool 10 min. Invert onto
serving plate.

For the glaze, combine peach preserves and peach schnapps in sm. bowl.
Brush glaze on warm cake.

If the optional extra topping is desired, combine the Cool Whip with
the peach schnapps. Spoon onto cake slices when served.


HARVEY WALLBANGER CAKE

1 box yellow cake mix (2 layer)
1 box (3.75 oz.) instant vanilla pudding mix
3/4 c. Galliano
4 eggs
3/4 c. oil
Harvey Wallbanger Glaze or Broiled Frosting or Powdered sugar

Preheat oven to 350 degrees. Combine all ingredients and beat with
electric mixer for 5 minutes at medium speed. Pour batter into greased
and floured Bundt pan or a greased 9 x 13 inch pan. Bake 45 minutes or
until done.

If using Bundt pan cool for about 10 minutes before turning out on
rack. Sprinkle with powdered sugar or glaze while warm. For 9 x 13
inch cake top with Broiled Frosting or Glaze. Makes 16-20 servings.

HARVEY WALLBANGER GLAZE:

1 c. sifted powdered sugar
1 tbsp. Galliano
1 tbsp. orange juice
1 tsp. vodka

Combine ingredients and drizzle over cake while it is still warm.

EVERCLEAR?! You bring to mind the incessant Evercle*nse
commercials. Even *I*, a person who doesn't watch TV and no
longer has the radio on ALL the time, hear quite enough of those.

I recently made a nice sangria with peach schapps, white wine (drier),
a little lemonade concentate and soda water. That would help use it up
quickly- I think it was 3/4 cup to a 750 ml bottle of wine.
