My rhubarb is just coming up. I'll have to try this in a few months
when the stalks are large enough to harvest.

I have seen a variation that adds a bit of frozen orange juice
concentrate.

I suspect that if those books aren't actually somewhat old, that they
are referencing old information. It's been years since sugar was "evil"
for diabetics. These things hang on for a long time, so I still see it
in places, including here. But I've taken classes in diabetic
management and diabetic nutrition (which of course are very closely
tied), and when a participant in the class mentions "sugar" in a
negative way, they get their knuckles rapped with a ruler, and reminded
that, for purposes of the class, sugar is just a form of carbohydrate,
and it just shares the "evil" of any big "C" food.

James is basically the same way. He eats plenty of carbs as whole
grains, fruits, and veggies, and the occasional "bad carb" as sugar or
refined flour. He has had normal blood sugar and HgA1C levels for about
five years without medication (he used medication before then). He also
attributes his success to the amount of exercise he gets -- he probably
walks an average of five miles a day.
