Default Crocodile and mushroom curry Recipe

Ingredients:
Olive oil
1 garlic clove, crushed
½ red onion, sliced
2 tbs red curry paste
140ml can coconut milk
¼ cup Campbells chicken stock
150g crocodile, partially frozen, diced
½ bunch broccolini, trimmed, roughly chopped
100g gourmet mushrooms, sliced
1 tbs fresh lime juice
1 tbs brown sugar
2 tbs fish sauce
½ packet 90 Second white rice
Coriander leaves, to serve

Method:
1 Heat oil in a frying pan over a medium heat, sauté the garlic and
onion for a minute until soft. Stir in the curry paste, cook for 30
seconds or until aromatic. Add the coconut milk and stock; bring to a
simmer

and add the crocodile, simmer for another 3 minutes.
2 Add the broccolini and mushrooms and cook for another 2-3 minutes or
until the crocodile is cooked. Combine lime juice, brown sugar and
fish sauce in a bowl and stir into the curry, cook for another

minute.
3 Cook the rice according to packet directions.
4 Spoon rice into bowls, spoon over the curry, top with coriander and
serve.
