Default Eggplant sandwiches

I had some leftover tomato sauce, ricotta and mozzarella; Shaw's had some
nice-looking eggplant.

Fried some eggplant slices, spread ricotta between each two slices, topped
with sauce and then sliced mozzarella, and baked.

Some fine leftovers!

Nice. I'm always a lilttle sad to see food going without garlic and
herbage, but the eggplant and those cheeses are gentle things, so they
probably got enough from the tomato sauce. My knee-jerk comment
stiffled.

That sounds really good, Felice, and a nice way to use leftover
ingredients. I like to slice eggplant and cook it until it turns
brown. Sprinkle with a little salt, put it in pita bread with sliced
purple onion and some tzatziki sauce.

Tzatziki

2 cups cucumber, seeded, diced 1/4 inch
1 pint yogurt
1 cup sour cream
1 teaspoon sugar
4 cloves garlic, minced
2 tablespoons chopped fresh dill

Toss cucumbers in 2 teaspoons kosher salt and place in a colander over a
bowl. Cover with plastic wrap and refrigerate for 1 hour. Rinse off salt
and dry on paper towels.

Combine cucumbers with remaining ingredients and chill for at least 30
minutes.

Ah, so THAT"S what I can do with the leftover eggplant. I took only the
middle slices last night, which leaves me with the butt ends, which it seems
could be used for this. Thanks!

Next time try to fry eggplants like this: egg mixed with pecorino cheese
and parsley, then breadcrumbs. Then you could add some cooked ham and
fontina or mozzarella cheese. Then put in oven like vegetarian cutlets "alla
valdostana".

I Like very much Tzatziky. But I think that sour cream it's not necessary.
Greek yogurt (the real one) is very compact and similar to cream.

Greek yogurt isn't widely available in the US, so we use things like
sour cream.

Ohhh! But you can use also a simple yogurth with the add of some
philadelphia light cheese. In this way calories go down )) and taste is
fresher....
