Default Recipe Satay Chicken Pizza

2 chicken fillets
cut into very small bits

500g PLAIN flour
1 1/2 tsp of dried yeast
1 tsp salt
little pinch of sugar
1/2 cup of warm water not TOO warm
2 large onions chopped fine
500g yoghurt
olive oil


MARINADE

2 or 3 cloves of garlic chopped fine
small to medium red chilli chpped VERY fine
1/2 to 3/4 tsp cumin & coriander
1 shallot or perhaps a bit more chopped fine
3 tblsp soya sauce
6 tblspn of coconut milk
2 tbspsn sesame oil
salt and freshly ground pepper

You will need to preheat your oven to 250 c

Combine all the marinade ingredients and pour over chicken
whack in the fridge for a few hours

place water in a small bowl add yeast and sugar and stirl like crazy
to dissolve


in a large bowl double sift the flour make a well and add 1 tspn of
salt the the yeast .
Mix and knead into a dough then place it in a well oiled bowl
leave to rise at a minimum 1 hour


come back roll out the dough on your work surface (we use marble)
dusted with some more plain flour.
When finished brush the dough with sesame oil and top with chicken and
onions sprinkle with remaining marinade


pop the pizza into the oven for 20 minutes or until it is fairly brown

serve with yoghurt and garnish with what you like we use mint but
coriander is probably better
