Chi Chi's Sweet Corn Cake

1 stick butter, softened
1/3 cup masa harina
1/4 cup water
1 1/2 cups frozen corn - thawed
1/4 cup cornmeal (yellow)
1/3 cup sugar
2 tbsp heavy cream
1/4 tsp salt
1/2 tsp baking powder

Preheat oven to 350 degrees.

Blend butter in medium bowl till creamy add masa harina and water and
beat till well combined.

In food processor coarsely chop defrosted corn (leave a few kernels
whole). Add chopped corn to butter and masa harina mixture ad
combune. Add cornmeal and combine.

In separate bowl, mix sugar cream, salt and baking powder. When well
blended add to the other bowl and stir well.

Pour batter into 8" X 8" baking pan. Cover with aluminum foil. Place
8X8 pan into 9" X 13" pan filled 2/3 of the way up with hot water.
Bake for 50 to 60 minutes or until corn cake is cooked through. When
it is done, remove small pan from laarge pan and let stand for at
least 10 minutes. Serve hot or warm.
