Took mom to Wallyworld yesterday. I was hoping to score a good deal on
corned beef, it being so close to St Patrick's Day, but was shocked into disbelief when I saw the prices: $3.48lb for corned beef and $3.86lb for "boneless" brisket! Well, screw that. I've never paid more than $2lb during St Pat's corned beef sale days. And what the Hell is "boneless" brisket? I've yet to see a bone-in brisket. What's with these insane meat prices? Gas is at the lowest in 4 yrs. What kinda uncooked corned beef prices prices are you folks seeing? nb |

They always way overpriced. Buy the larger "packer cut". It contains both the point and the flat cut. Make corned beef out of the flat and stew or ground beef out of the point. |

They also have Black Angus and it's $3.77 and $3.97 for round. I happen to like Angus, so that price is okay with me. Whether I do a corned beef this year remains to be seen. I think we have a brisket or two in the freezer still. --Lin |

A couple years agot he local Randall's (Safeway) had it for about $2/lb on sale St. Pats day week. And the stuff lasts so long that it doesn't even go on sale after St Pat's day when they're overstocked. If you start corning a flat of regular brisket tonight, it'll be ready by St Pats day. -sw |

Export Format Mark Peel's Brine marinade 2/3 cup salt 1/2 cup sugar 1/2 cup black pepper, cracked 1 pinch thyme, dried 13 cloves 13 allspice, cracked 3 bay leaves 13 juniper berries, crushed 1 water Combine salt, sugar, pepper, thyme, cloves allspice, bay leaves and juniper berries in saucepan. The spicing is very faint, mostly you taste the salt and a bit of the sugar. It's a bit like a very elegant version of commercial smoked turkey, only without the smoke. A couple of dashes of liquid smoke might be nice also. Peel also used this recipe for roast pork and smoked. fish. For a pork loin, cut all the amounts by half. for fish or chops, cut them to 1/4. Just cooked some and is great! 2 1/2 hrs simmering then potatoes, carrots & cabbage in the cooking water with a bit of lemon juice to keep the cabbage green. |

And the best is dry cured like how gravlox is cured. Corning is a relatively lengthy, laborious, expensive process, often at an expense greater than the price at which the beef could sell raw. And unlike how injecting saline increases salable weight, corning extracts significant moisture and so reduces the net salable weight. Corning makes meat a delicacy, and at the same time increases its price... like how you can buy fresh salmon for like $7/lb but when that same salmon is made into lox it costs close to $20lb. I don't know why folks buy that saline injected fresh meat... only reason I can come up with is low IQ. |

I got 2 pieces but one of them is a big ugly piece that's mostly fat. Uggggh, that's what I get for carelessly grabbing a hunk of meat and dumping it into the shopping cart! I'm boiling both of them but that piece deserves special treatment. Hopefully, boiling and roasting and a whole lot of barbecue sauce will help disguise it's shortcomings. I'm not expecting much though. |

I went to Vons today to buy the corned beef pont at $.99. The butcher said they sold out the first day the ad appeared and when they ordered more it was recalled. He didn't know why it was recalled. I paid $2.69 per pound with the Vons Card for the brisket. Without the card it was $3.69. |

If I wanted prepared food, I'd go to the freezer section or the prepared food section. If I buy a steak, that's what I expect, just a steak. Second, I don't appreciate them adding 20% of water by weight so I can pay $5 a pound for it. Bad enough they do that to pork, it would really annoy me if I found them doing that to beef. People shopping at WalMart don't seem to know what they're buying. Why would I shop at a sneaky store like that if I have a choice. nancy |

I wouldn't have bothered, I wouldn't want to cook corned beef again... why didn't you buy a few the first time... I wouldn't cook less than at least four, I begin early because it takes me a good part of a day to cook corned beef... for someone who loves corned beef a flat isn't much, two people shoulda finished it all in one sitting. I use my 18 quart voluptuous PIAZZA stock pot to cook corned beef: http://i60.tinypic.com/14uvqfa.jpg Four flats in there, the first simmer is to remove salt, then I get to the actual cooking: http://i60.tinypic.com/30be710.jpg After cooking it goes into the oven to finish the process. |
