An acquaintance of mine just published a book, Danish Food & Cooking. I
managed to get it through Amazon, since it's not generally available in
bookstores. The recipes look good. The SO has started lobbying for me
to make the Danish pastry recipe in the book. I started out testing
simple first, by making [DON'T READ FURTHER, BARB!] pickled beets. They
were quite tasty. I'm not getting anything out of this plug, but the
book is worth a look if you find it.

As a half-Swede, Danish cooking sounds good to me! (And I LOVE pickled
beets!)

Does it have the recipe for those round donuts called (I'm going to
slaughter this) Obeskivers?

<Barb slides into research mode> Are they for canning? Would you share
the recipe here? I'm always looking for a recommendation for pickled
boiled dirt chunks as a state fair possibility. I don't eat them but
I'd like to see the recipe and the particulars. If you won't post it
here, would you email it to me, please? Put a dot between my first and
last names to avoid earthlink's spam filter.
Thanks. <research mode off> Bleah! Gack!

Aw, Geez Barb, Miz Anne and I are having tuna salad on lettuce for lunch
today with pickled dirt chunks on the side. Makes an excellent Lenten
dish, particularly for those who need to be humbled a bit. <VBG>

Danish cooking is good. The first time I went there I read a number of
travel books that indicated that Danish cooking is rather bland, mostly
meat and potatoes. I was delighted to discover that Danish food is very
tasty. While it may not have a lot of fancy sauces and herbs, it seems
to make the best of basic but high quality ingredients. Their pastries
are exceptionally good. I also enjoyed lots of good food in Sweden last
summer, and pastries every bit as good as the Danes.
