Default Tonights dinner 21Mar..Chicken rissoles with basil and pine nuts on polenta/couscous

We were going to have this last night, and I even went shopping for some of
the ingredients that I didn't have........ but life got in the way, and we
ended up having salad with some leftovers.

So, all things being equal, we will be having it for dinner tonight....
except I'm going to do it on couscous.

I have polenta, but I use it for dusting my homemade pasta.

Sounds divine! Were the rissoles moist enough? (I find ground chicken
can get dry easily)

Too bad about the couscous not going over well - how did you prepare
it?

They certainly were moist. I didn't overcook them in the frying pan, and
finished the last of the cooking in the sauce.

It was as it should be, but the SO isn't a couscous fan, unless it has
heaps of other flavours in it. I just used homemade chicken stock, butter
and a bit of salt. I wanted the chicken flavour.
