![]() This is the first thing I made in my new countertop oven, convection oven, toaster, rotisserie, blah dee blah. This recipe was posted here a few days ago. While I was making it I questioned "where's the vanilla" or some kind of essence. I resisted the urge to tinker with the recipe and add something. It doesn't need it, it is delicious as is. I measured, sifted, added, mixed and poured. http://i43.tinypic.com/awyr1c.jpg I miss read the recipe and only mixed up half the almonds for the topping the recipe called for. It turned out great anyway. Please note the immaculately clean oven, for the first and last time. http://i42.tinypic.com/rjo6x2.jpg Stan mentioned that adding some blueberries would be nice also. Or both. But most coffee cakes are deliberately on the dry side, since they're supposed to be accompanying coffee. I guess adding the other items would make it more of a dessert. Questions: 1. Most butter-pecan dishes have a somewhat ramped-up amount of salt, since the added salt brings out the butter-pecan flavor more fully. Do you think a little more salt would have done that here? 2. Do you think the pecans might have benefited by being toasted or cooked in the butter before going on top of the cake batter? (I've kind of got pecans on my mind since I opened a big bag of them this morning to make Wayne's "Special Day" waffles -- which were a big hit, by the way. Thanks, Wayne!) Bob |
