Watching White Men Can't Jump.... for the very first time. LOL, yes!
First time. OK, I'm not really watching. It's on TV in the same room
that the computer is in.

Did you look up foods that begin with Q as soon as you heard the line?

I looked them up and my aha moment was a big DUH... Guess I'll never
make it on a game show.

The only thing that comes to mind is quince, and all I know is that's
some kind of exotic fruit that I've never tasted.

My copy of the English version of Larousse Gastronomique lists 10 foods
with names beginning with "q". They don't mention quinoa, quark or
quesdadilla but include quail, quince and quenelles. Quark is the German
word for yoghurt isn't it?

Another one! It is produced by a fungus so a case could be made for
claiming it is organic :-) I've tried it and it is not bad at all but I
would not go out of my way to eat it.

I usually see that spelled "huitlacoche", although I see in can
start with a "c" instead of an "h", so maybe it also is
occasionally spelled with a "q".

I think it's a bit thicker than what we think of as yogurt... more
like cream cheese.

Exactly my midnight snack! Duck crackling quesadilla, that is.

Recipe:

1-2 teaspoons chopped duck cracklings (or more)
4 slices cheddar cheese (sliced from a supermarket block -- about
three Tablespoons)
1 medium shallot, minced
1/2 teaspoon pickled serrano chile, minced
Juice of 1/8 large lemon (1/4 average lemon)
1 corn tortilla

Chop the duck crackling chunks into pieces that will quickly render
their fat when heated (small, that is). Place duck crackling pieces
in a dry iron skillet and fry to render some of the fat over
medium-low heat. Remove the cracklings and wipe the skillet with a
towel to remove most of the fat. Make that almost all of the fat.
Allow the fat still in the cracklings to soak into a paper plate or
paper towel.

Meanwhile mince a small piece of pickled serrano chile, cut off four
medium small slices of cheddar cheese (I didn't find the queso Oaxaca
till too late -- gotta rearrange my cheese drawer), and finely chop a
shallot.

Set the cheese onto the hot iron skillet so it will melt to a puddle
about the size of a corn tortilla and let it sizzle. Toss on the
chopped shallot, the duck cracklings, and the minced serrano. Fry for
a few moments and lay a tortilla on top. Cook till the cheese has
begun to crisp and flip it all over to crisp the tortilla side If the
cheese has firmed up enough, the whole shebang will turn with the
tortilla. That's the plan, anyway.
