When I was in 4-H, back in the day, we used a Crisco-type frosting that was purely for cake decorating. It could certainly be used for mock cream filling. She altered the recipe a bit, (I need to pick her brain on what she did differently), but her puff pastry with the Dream Whip filling was better than anything I had gotten from a bakery, Longevity in my family like it is I have another 25-30 years to get it out of her! A lot of folks don't even bother to hide their addresses anymore because their email provider is good as spam filtering. My main addy is . I get an average of 10-20 spams a week. It's Punk Rock with a few actual musical touches. It will not replace the cool jazz I've been listening to for almost a year now, Miles Davis mostly. I've been rather busy. We're shorthanded at work, and I'm pretty much the go to guy to cover for contingencies. You're right that Crisco recipes elicit insults from me. Just calling a spade, a spade. Speaking of which, my son has been bugging me to teach him spades for several weeks, and I finally did tonight. He caught on very quickly, then went online to play against other beginner level players who could not have known that he's seven. One nice food thing here is that Aldi has had bell peppers, one each of red, orange and yellow for 99 cents. Ripe bells for that price, I'm all over it. I served them as a side dish with smoked chicken breast. Tonight I Stir fried/sauteed them with button mushrooms as an adjunct to angel hair with meat sauce. I'll put pix up on the flickr site when I recharge the batteries for the camera. Do any of you still use non-rechargable batteries? NiMH batteries are not like those old NiCad crappy batteries that I used in the old days. The chicken, smoked with hickory and cherry were just dreamy. Ingredients Yields 20 to 25 tiny tarts 400g pastry, rolled thin to 2-3mm Lemon Icing 1 cup icing sugar Juice of 1 lemon (need a little less than a ¼ cup) Chocolate Icing 1 cup icing sugar 2 to 3 tablespoons milk 2 teaspoons unsweetened cocoa Butter Cream 1.5 tablespoons full cream milk ½ cup castor sugar ¼ cup water ½ teaspoon gelatine powder 1.5 tablespoons water 180g unsalted butter 1 teaspoon lemon zest Quince paste melted or jam (raspberry or marmalade) 50g quince paste 2 tablespoons verjuice Method Heat oven to 190C. Cut out circles in the pastry and place in a gem tray or glass dishes (tiny shallow glass dishes 5.5cm wide) already sprayed or oiled. Cut out larger circles of foil and press into the sides of the pastry and fill with roasting beans and put into the oven for 10 minutes to blind bake. Inhibit the pastry by taking the foil and beans out, and with a tea towel pressing down into the pastry shells. Bake another 5 minutes till crisp. Inhibit again with a tea towel if needed, and bake into the oven if the pastry isn’t completely cooked, then allow to cool. Icings In a bowl combine sugar and cocoa and as much milk as needed to make a smooth thick runny paste. In another bowl mix the icing sugar lemon juice to make a second thick runny paste.ng. Butter Cream (mock cream) In a small saucepan, combine milk, sugar and first amount of water and stir till sugar is dissolved. Sprinkle gelatine over extra water and stir into the mixture and stir till all dissolved. Cool. Beat butter in small bowl till light and white (about 10 minutes) then gradually add bit by bit the other mixture. You need to keep mixing for 12 to 15 minutes as it looks like its split but will eventually incorporate. Put lemon zest in at last moment. Melt quince paste with verjuice at a low heat to a jam consistency. Spoon a little quince or jam at the bottom of each tart case, fill to the top with butter cream and spread evenly across the top. Cut a piece of cardboard a little larger than the tart. Ensure the icing is viscous enough yet able to flow. I still have some in the freezer when they did have them on sale. I washed them, cut them into strips and put them in ziploc bags in the freezer. I am down to my last bag. Glad your son has learned to play Spades. He is getting old enough to take piano lessons or guitar lessons during the summer. IMO, it is important to teach music and foreign language to children when they are young. Becca |

I have a viola, and he has a tiny violin that he used to goof off on when he was little. He's most interested in learning drums. We expose him to lots of good music. We have both Sunday packages to the symphony, so that's at minimum 12 classical concerts a year. I want him to continue to derive joy from music, and that means not making it be work. The exception is theory. That will be integrated into his math/physics instruction. We never try to get him to do activities other than swimming lessons. This year he's going to be on a swim team. The agreement is one Summer. If he wants, he'll never have to have another swim lesson or be on a swim team again. My wife's idea is that after 1 Summer on swim team, you'll be a strong swimmer forever as long as you continue to swim recreationally.
