Default Hello my friend. Pandora is alive...

Finally I have cut my foot )))))
I came back from clinic yesterday. It's all ok and today I can walk without
crutches yet. But I need (as my surgeon ordered me) another day of rest with
leg up. In one or two days I think I can spend more time sitting near my pc.
Have a nice day and nice cooking time.

Good to hear you survived your operation.

Did you get one done, or both?

I have heard that it is rather painful getting bunions cut out, so make
sure you have plenty of wine close at hand to use as a painkiller :-)


At least we'll know where you'll be for the next few weeks :-)


I'm off now to *finally* cook a Madras curry........ got a whole chicken
I'm about to cut up to use in it.

ROTFL. Was painful only the day before, but I with TORADOL (a medicine) I
didn't suffer any pains
For me it's better not drink wine because I can't sing and dance actually

Glad the surgery is over and you are home resting. Keep your foot
elevated and I hope you can work in your garden soon.

Oh, Pandora... excuses, excuses. There are ways to rest with your
foot elevated and still be at the computer. Seriously though,
glad to hear all went well! Hopefully it won't be painful when your
medication wears off.

Glad to hear you're back home and finished with at least 1/2 of the problem.
Be sure to follow the instructions as far as crutches are concerned
carefully. Normally we pay little attention to our feet and balance. Yet
pain on our feet can cause our entire muscle and skeletal system to go out
of whack.

Do your self a favor. If you have been walking with pain for quite a while
take a look at the bottoms of your shoes. If they are uneven with the
manner in which they are worn out, have the shoes repaired or purchase new
ones. We unconsciously walk in a manner that avoids pain - this adjustment
can be very harmful.

Been there done that.

You know very well the problem my dear. For 40 days I have to walk with a
particular shoe: "Barouk shoe" which is like plaster for my foot (as my
surgeon says)

I used this recipe.........

But used a whole chicken that I skinned, a bit extra chilli powder as well
as some cayenne (I like a bit of 'heat' in my curries), used chicken stock
instead of beef, and rounded it out with a tin of coconut cream at the end
and let it all cook till the meat was falling off the bone, and the sauce
had reduced to a nice thick consistency.

I didn't make any raita, or use any mint, just served it with some cocnut
rice. I was going to leave it for a couple of days, but we needed a curry
'fix' ASAP :-)

The leftovers should be good by Sunday night :-)


Madras beef/chicken curry


Ingredients (serves 4)

* 2 tablespoons ground coriander
* 1 tablespoon ground cumin
* 1 teaspoon turmeric
* 1/2 teaspoon freshly ground black pepper
* 1 teaspoon chilli powder (optional)
* 2 garlic cloves, crushed
* 2 teaspoons grated ginger
* 2 1/2 tablespoons lemon juice
* 2 tablespoons olive oil
* 1kg chuck steak, cut into 2.5cm cubes
* 2 tablespoons tomato paste
* 1 cup beef stock
* steamed basmati rice, raita and mint leaves, to serve

Method

1. Combine coriander, cumin, turmeric, pepper, chilli, garlic, ginger
and lemon juice in a bowl to form a paste. Set aside.
2. Heat 1 tablespoon of oil in a large saucepan over high heat. Add
half the beef. Cook, stirring, for 2 to 3 minutes, or until browned.
Transfer to a bowl. Repeat with remaining oil and beef.
3. Reduce heat to medium. Add spice paste. Cook for 1 minute. Return
beef to saucepan. Cook, stirring, for 1 minute, or until meat is coated
with paste. Add tomato paste and stock. Bring to the boil. Reduce heat to
low. Cover. Cook for 1 hour 15 minutes, or until beef is tender.
4. Remove lid. Cook, uncovered, for a further 15 minutes, or until
sauce has reduced and thickened slightly. Serve with rice and raita. Top
with mint leaves.
