I had some bits of red, green, yellow and orange peppers that were already diced. I added some fresh herbs from the garden, a little chopped sweet onion and some mixed exotic mushroom pieces. Although some folks on here would strongly disagree, I think that I'm a pretty good cook, but eggs are the most damned difficult ingredient to employ. I'll never consider myself a *really* good cook until I come a lot closer to mastering them.
