I was going to grill some chicken breasts - no dice - about 3:00 PM the cold
wind from the northwest came up. I'll be dammed if I was going out on the deck to grill. Plan B Cut up the breasts into chunks - browned the chunks in EVOO , diced 1/2 a large onion threw that in the pan, added a can of Hatch Green Enchilada sauce and simmer. Served over white rice and some fresh zapped broccoli with a little cheese melted on top. You? Dimitri |

Gosh, that sounds so good. I have a spicy stock I made yesterday that would make a great white chicken chili. > You?
