Default Dinner last night

I was going to grill some chicken breasts - no dice - about 3:00 PM the cold
wind from the northwest came up. I'll be dammed if I was going out on the
deck to grill.

Plan B

Cut up the breasts into chunks - browned the chunks in EVOO , diced 1/2 a
large onion threw that in the pan, added a can of Hatch Green Enchilada
sauce and simmer.

Served over white rice and some fresh zapped broccoli with a little cheese
melted on top.

Can't top that. Don't eat dinner very often.

I'd sure as heck eat that for breakfast!!! :9

Boy, does that sound familiar. While the wind was pretty whippy most of
the day, a little rain shower appeared just about grilling time, so we
went to:

Plan B for us was taking the two grilled patties from the night before
and converting them to the meat in a spaghetti sauce.

Gosh, that sounds so good. I have a spicy stock I made yesterday that
would make a great white chicken chili.

We had a beautiful salad, toasted ciabatta bread and a glass of red wine
with the spaghetti. No dessert (we went into food coma after the meal as
it was).

Tonight I hope to put chicken on the grill! Perhaps grill enough so I
can do some sort of enchilada dinner in the next couple of days and make
use of the stock I have.
