I think the scalding is supposed to sort of parboil them, eliminating a bit
of grease. My auntie, Myrt, loved these things. Always said you have to
have sweet potatoes with them. Never understood why. I preferred squirrel
or rabbit if we were eating out of the 'critter cabinet' when I was younger.
