Default Cookout tonight, rain or shine

It's the end of the school year. About 50 students/faculty/staff will
gather at the p'rfesser's house. Ten pounds of chili has been in one
slow cooker since 6am, to top about 100 hot dogs. Baked beans in the
other slow cooker. Coleslaw, brownies, odds and ends, plus whatever
the attendees want to bring. Real beer for those who like beer, light
beer for those who like to pee.

It may be pouring rain but the party will go on regardless.

We ain't worrying about cholesterol or blood sugar tonight...

Tomorrow I am going to an outdoor wedding/reception where it is likely
to rain. It is my job to cut a 300+# cooked pig up into 200 plates
of pork.

Sounds like a fun plan. :-)

Most of the schools in our area are closed for 2 weeks due to the panic
the press is so good at spreading.

Oh, absolutely. Unfortunately I cut up only one large (Texas sweet)
onion...and it wasn't gone by evening's end. Some people just don't
know what's good.

It's almost 10pm here. You'd think with students involved that the
party would run another four hours. But everyone is gone. These folk
are a mild bunch, I fear.

No 'music' from the chili. When I make chili for hot dogs, there
ain't no beans in it.

The p'rfesser has eaten and drunk far, far more than he should. And
tomorrow morning he's giving makeup exams. Ugh. When you schedule
makeups for the saturday AM after the last day of class, usually no
one requests them... :-) (that's how I've gotten out of preparing
makeups for at least five years).

Sorry... not much of a recipe, but here ya go. 6-7 lb ground chuck
is browned and the fat poured off. (Broth is separated and poured
back in.) Add about 3 lb chopped onions, couple of tbsp kosher salt,
five or six cloves of garlic, minced. About 1/2-3/4 cup dark chili
powder. About a teaspoon of black pepper (from my NEW Keytop pepper
mill!)

Cook for a few hrs in a 5 qt slow cooker. Add some more onion. Taste.
Adjust. Cook some more. Careful not to overcook or you get a 'burnt'
taste. I turn it off around 1:30, then back up to high around 4pm to
be ready at 5-5:30.

It must have been reasonably edible, cuz there's just enough
left---maybe two cups---to make chili con carne on Sunday...

I am very pleased to notethat most of the light beer is still in its
cans. The wheat beer and honey porter and other real beers were
snatched up first. There is hope for some of these young people.

we had several piles of cut wood, so monday I announced we will have a
bon fire friday nite. well I emailed a few friends and said bring
some meat and we'll grill it and I had chips for side (we are on a
budget). we had more people than I had planned for and most didn't
bring anything - but at the end of the nite it did not matter! we had
such a nice evening and no left overs to store. the only problem - we
ran out of ice and plastic cups/plates. i'm on my 3rd dishwashing
from last nite.
