The V-8 sounded good. You'd need something to wash the canned tuna on
instant rice down, although I'm sure that the lubricating oil helped.

I'm not even "afraid" of *your* breakfasts. Hey, they'd be a good
diet aid. Canned tuna on instant rice doesn't inspire eating, much
less over-eating.

I get to have real eggs, lightly basted or over easy, accompanied by
bacon and home fries with buttered wheat toast and sliced avocado,
with cafe au lait and fresh orange juice.

Why is it that you don't have yummy breakfasts? Are *YOU* afraid of
them?

It can't be the purines. Heck, you just dumped a can of tuna onto
your instant rice.

This morning I'm slicing fresh strawberries to have with a little
half&half and a tiny bit of Splenda. The coffee is on. It's drip
brewed Sumatra. I'll scramble some eggs (not in the microwave) for my
wife and son, to serve with home fries and the strawberries.

a pan. Put the works in a 10" whole wheat wrap with a little grated
cheddar and some salsa, 2 steaming cups of Kona. One toast with

You still could, or close to it. Putting more effort in, and
prioritizing quality can happen even within the context of dietary
restrictions. Take the rice, for example. There's little dietary
difference between brown rice and "instant" brown rice, but the
aesthetic difference is huge.
Eating well is more difficult with dietary restrictions, but that's no
reason to throw in the towel and resort to frozen taquitos (are those
healthy?), jarred chipped beef (there's something you could have cut
out to make room for the bacon), <shudder> Gatorade, Jello, canned
tuna with off brand (NYC) salsa. These are all things that you have
announced (presumably with *some* pride) that you have had for
breakfast in the past couple of weeks.
Instead of saying, "I used to breakfast like that. Ya BUM!!! " you
could go a long ways toward getting to eat like that, at least
occasionally. You just have to cut out the crap to make room.

4 oz. home made sausage, 2 eggs and a handful of home grown Lentil
sprouts, all mixed up and cooked in a cast iron skillet in a bit of
Olive Oil.

It was WONderful.

I like Lentil sprouts but am currently starting a batch of Sunflower. ;-d

If I didn't have the cooked potatoes, it would have been something
like this: oil (olive, not EVOO), potatoes, onion, some bell
pepper (opt.), salt, lots of pepper, lots of paprika....
(Probably forgetting something critical.) I usually start cooking
the potatoes etc. before I add the onion, because that gets too
cooked. At some point, I add chopped green olives. Then the egg
mixture....

I've done black olives in eggs, but never green.

I make something similar - a potato omelet we call 'em. I quarter a
potato lengthwise and slice each quarter into eighth inch slices or
slightly bigger. I fry them until they are golden - in about a half inch
of oil. Then I put the potatoes in a hot skillet in which a bit of
butter and oil has been warming up. I pour over the potatoes two or
three eggs which have been scrambled and toss the potatoes until they
all have some egg on them. This should not be really eggy. There is
just enough egg to hold the potatoes together. I smoosh (yes smoosh!)
the potatoes down a bit with a spatula and let it cook on medium to low
heat. Then I flip it over to let the other side cook. Voila.

This is my son's favorite breakfast. We used to add bits of ham before
the DH decided he didn't want to eat pork anymore. :-(

Yes, ham is an obvious addition. Or maybe one could try a
non-pork-based sausage or cold cut. I love potatoes and eggs. (I
wonder when I will be LCing again....)
