Wow. Best cows-milk blue cheese out there. Only sheep's milk could
possibly make this any better. This is the next best thing to roquefort. I'm very impressed, it being such a "new" cheese. $22/lb from Newflower/Sunflower market, but worth it. http://www.cashelblue.com/ Also on the menu today was Abbaye Ste Mere, which was just cheese.
