Really really cold for a short time or home-freezer-cold for a week or two, from what I've read. And if the cold doesn't kill 'em, the salt will. After all, people have been using salt to preserve food (i.e. keeping the wee beasties at bay!) for thousands of years. If you're feeling really adventuresome, try some hákarl sometime.
