Default Homemade chilli powder

I ran out of the bought stuff and the brand I was using was pretty
horrible anyway... and DH wanted chilli so I decided to mix up my own
in an empty spice jar. I didn't measure, I just used a regular
teaspoon to scoopy the spices out of their individual jars and into
the empty one. So my measurements are very rough -

1 heaped tsp garlic powder
1 heaped tsp onion powder
1 tsp coriander
1 tsp cumin powder
1/2 tsp ground cayenne (if that!)
a pinch of cinnamon
1 tbs paprika
1 tbs smoked paprika

Then I shook everything up and tried it and it tasted pretty darned
good. I didn't put any salt into it, and once I'd added a can of
tomato sauce to my meat it didn't need any salt at all.

The coriander is a surprise to me, but I bet it's terrific! Every
chili powder blend I've ever seen had a goodly amount of oregano,
Does the smoked paprika give you the same effect as chipotle powder?

The above looks worth a try .
Although a tad confused why no ground chillies went in if one is to call
it chilli powder

But looks a decent mix. Thanks for posting it

As we bought back a heap of fresh ingredients last week
and a monster Mortar and pestle that needs a work out .

One thing have noticed though with some brands of onion & garlic powder
is the variance in tastes and strengths . Which brands did you use?

Ground cayenne, paprika, and smoked paprika *are* ground chiles.

Yes. Barely. (IMHO it needs some ground guajillo or pulla or
California or New Mexico chiles, and some ground anchos wouldn't hurt.)

That's how you do it. No WalMart needed.

Try adding some citrus, some oil, and making it a marinade.

The point is that they are peppers. You may prefer one type over
another, but the recipe contained peppers.

I forgot - I put a tsp of ground oregano in it too! I used some
coriander because I love it. I put it into just about everything :P No
idea about chipotle, but I always put some smoked paprika into my
chili to give it a more complex flavour.

If you want to make this chilli powder, I forgot an ingredient! As was
pointed out to me, it also needs 1tsp ground oregano. Sorry about
that!

I don't bother with "chili powder", either store bought or homemade
these days. I just have a variety of dried or ground chiles, plus other
spices, that I use in making chili or whatever. Also canned chipoltes
in adobo. I made some chip dip with some of the latter, sour cream, and
shredded cheddar. It was . . . interesting. I'm not sure it was
balanced quite right, but it wasn't bad.

if you try the chipotles in adobo for the first time in chili, start out
easy. you can make some seriously hot chili with too much without hardly
trying. i had to eat mine with *lots* of sour cream and cheese.

Heh, I made aem's shrimp recipe with the chipotles in adobo and
should have taken his warning more seriously. Great dish, but
boy was it hot. Those suckers look so innocent.
