Default Over-marinating?

I bought some ready made shish kabobs at the store yesterday (Saturday),
intending to grill them tonight (Sunday). I've had them before, but usually cook
them the same night. They're made right in the store and are delicious. Chicken
and beef with veggies. The marinade seems to be an Italian dressing type, which
I'd use making them myself. Anyway, plans changed for tonight, so I'm hoping to
use them Monday night. My question is will they still be good after two days in
theiur marinade in the fridge. I ask because I understood that a marinade itself
can sort of "cook" the meat. Thanks.

The cooking of the meat by the acid in the marinade is true for fish and
seafood. They will turn to mush. The stronger (tougher) the meat, the more
marinating it can take. If your stores are like the ones around here, the
meat chunks on the kabobs is pretty good sized chunks. The store made ones
also do not tend to use as much acid in the marinade as you might at home.
I am sure they are fine, but may fall apart more readily.

Depends on the marinade. One made like an italian dressing should be
fine after two days.

Citrus is the usual ingredient that will hurt if marinaded too long.

Of course, if you're marinating fish in lemon juice for a while, you are
making ceviche that doesn't need cooking :-)

Once upon a time, I made a big batch of maarinated veg - peppers,
squashes, mushrooms - for a BBQ party. Last minute change of plans,
and I forgot about them in the fridge. By the time I got around to
them, I pretty much had pickles.

But, yeah, the beef chunks might even be better after another day.
