Default Blueberry muffins



In honor of Barb Schaller's b'day I am baking those
official Minnesota state blueberry muffins.

Wow, the recipe made a lot--24 medium muffin cups.
I hope they freeze well, or maybe I'll gift the neighbors
tomorrow.

Chicken *really* tastes like chicken. I just got done refrying
chicken. I took some baked thighs leftover from last night and fried
them in the pan with the oil and chicken crispies from yesterday
morning.

I'm glad my Clan were your guinea pigs. Frozen blueberries would work
also.

My wife bakes muffins every week or two and we have found that they keep
well in the freezer if you put them in as soon as they have cooled off.
Then you can take them out of the freezer about a half hour before
eating they thaw out and taste almost as fresh as when they went in.

The blueberries should be added to the dry ingredients,especially if
they are frozen. Add the frozen berries to the flour before they thaw to
prevent the colour leaching out into the batter.

I missed the recipe. I make the ones we learned to make in Home Ec a
zillion years ago. You know, mix dry ingredients, mix wet ingredients, fold
no more than 12 times.
