Default Those muffins

Blueberries were on sale yesterday for $2 a pint.

I made Barb's Minnesota Blueberry Muffins last night and we had some of
them for breakfast. They are delicious. Sweet enough but not overly
so. I highly recommend the recipe. For anyone who missed it:

Minnesota State Muffin (Blueberry) (makes ~24 medium size)

1/4 cup butter
2 eggs
1/2 tsp. salt
1 c. sugar
2 c. flour
2 tsp. baking powder
1 tsp. vanilla
1/2 cup milk
2 c. fresh or frozen blueberries

Preheat oven to 350 degrees F.
Grease and flour muffin pan (or use paper liners).

Beat together butter, eggs, salt, and sugar.
Mix flour with baking powder and sift into first mixture, alternating
with milk. Blend in vanilla. Add blueberries.
Pour into muffin cups and bake for 25 minutes.

MINNESOTA STATE MUFFIN: Blueberry; adopted 1988.
Statutory citation: Minn. Stat 1.1496
History: 1988 Minn. Laws Chap. 657 Sec. 1 (SF1686)

Great! I knew there were Blueberries without reason in my freezer.
Popped them out to thaw, finding just one cup. No problem, there was
also the same amount of Boysenberries to combine for the making. I
followed the recipe, but with the berry mix. Baked into just 20
muffins, though better described as slightly rounded-top cupcakes.
Boring.... I strongly suggest no one try this with a mix of no
telling how old frozen berries! Local market sometimes has non-frozen
blueberries that I will keep an eye out for, and I will watch for them
at my Farmers Market as well.
