![]() I guess I'm a slow study or just plain stubborn. Like all of you, I prefer fresh food. If I can get it fresh, not frozen or canned, I do. Since I live out in what would be considered "the boonies" a lot of the fresh food I buy wouldn't last until the next shopping trip, and I end up throwing away a lot of what I buy. I have finally started trying some frozen foods. I bought some frozen cod fillets and some frozen french cut green beans. I was really impressed with the cod. There were three individually wrapped fillets in the bag. While the fillets were defrosting I chopped up some garlic and lemongrass then dusted them with white rice flour. I was going to use the soy sauce but changed my mind. I deglazed with white wine instead. http://i43.tinypic.com/2j13m89.jpg To the browned butter I added some olive oil and the fillets. Frozen on the ship or at the farm, or picked green and thown onto a truck to ripen on the road. Or shipped frozen and thawed to be sold as "fresh". Sure the backyard garden is best, the farmer an hour away, but I can't raise fish in my yard. |

Unless you live where caught that morning and/or live seafood is available frozen is best. And the same with veggies... most frozen veggies are actually fresher than what's sold as fresh at the market... for truly fresh produce you pretty much need to grow your own. Unless you have a citrus tree to pick from frozen citrus is freshest and most nutritious. Paying a premium for refrigerated OJ that claims to be Not From Concentrate is a big fat sales gimmick, it is nowhere near as fresh tasting or nutritious as frozen concentrate you reconstitute yourself. |

Is there another method? Somehow, that stuff in the box does taste better to me than the frozen stuff. Nothing like buying a bag of oranges, peel, slice and eat as fast as you can. |

Most of our stores that have seafood not frozen have just defrosted some for sale. We do see a lot of salmon labeled as fresh, but unless you are serving it that night, frozen is still better. Of course, Whole Foods has a beautiful seafood department, but expensive. We buy the bagged frozen Cod at the big membership store, and have always been happy with them. I also often pan fry the fillets, but your are prettier than mine! DP |

It's fresh squeezed but it was fresh squeezed like a month before you bought it... don't you see those sell by dates... with only refrigeration it ferments and its nutrition is greatly diminished Nothing like buying a bag of oranges, peel, slice and eat as fast as you can. Oranges from the market could have been picked many weeks ago, they're not even close to fresh... once picked the the half life of Vitamin C contained in oranges being what it is it nearly totally expires in like a week. Unless you have your own citrus trees your best bet is frozen concentrate you reconstitute yourself. |

I couldn't help but wonder about the back story on that. I was very disappointed. I would do nearly anything to find a good schmalz herring in the stores here. The jarred stuff is crammed full of starch to thicken the cream sauce. This totally wrecks the taste. I'd love to make some fresh from scratch. Our grandparents made this with no education, no refridgeration. You got us, and the rest of the interweb. I used to moan when I couldn't find pita or kimche at the Farmer Jack, then realized it was all here, just unassembled. |

Here's the problem. I have asked the market here to order the stuff for me. The answer was no. No herring to be purchased. It's even hard to find when I go home to Philadephia, we buy the herring at the Russian deli, and cream it ourselves. But here, I can't get the fish it seems.
