So I have been looking for a chef to emulate.. And I think that I finally found him. His name is Michael White! The great thing about him is that he started out small just like all of us. He didn't have to live in some crazy town in the middle of Italy. So I have finally found the dude that I am trying to be!
Who do you think is the best? Check out who is the best.. I have attached the best recipe for a Burrata that is amazing! Tomato and Burrata Sfizi (Stracciatella) by Chef Michael White Makes 4 servings INGREDIENTS: 1 cup 2 tablespoons extra virgin olive oil, plus extra for drizzling 1 onion, diced 4 cloves garlic, thinly sliced 1 28 oz can San Marzano tomatoes 3/4 cups loosely packed, julienned basil leaves 1/2 teaspoon crushed red pepper flakes sea salt 1/2 loaf ciabatta, cut into 1/2 inch slices on the bias 1/2 cup + 2 tablespoons olive oil 2 tablespoons olive oil 1 lobe Burrata**, insides only PREPARATION: 1. In a large skillet, heat the 1/2 cup of olive oil over medium heat until warm. Add the onion and garlic and cook, stirring, over low heat for 6-8 minutes just until translucent. 2. Add the tomatoes, sea salt and crushed red pepper and let simmer for an hour. Sprinkle in the basil. Puree the sauce with a potato masher until you reach a thick sauce-like consistency and let cool to room temperature. 3. Brush the ciabatta slices with 1/2 cup oil and grill, about 5 minutes. Remove and reserve. Spread the inside of the Burrata on one side of a wooden bowl. 4. Pour the half the tomato sauce on the other side (and reserve the rest for future use). 5. Serve Burrata and tomatoes with warm bread family style for a great appetizer. **Burrata is a fresh mozarella, it differs from other fresh mozzarellas in that when it is sliced in half it contains a creamy inside. Check out who is the best.. The best to learn from must be Lidia Bastianich. In particular, her instructions are rich in technique, like Jacques Pepin is for French food. Both of those people have a restaurant background, so their advice would be very practical for a professional chef. Note that Julia Child never operated a restaurant, and sometimes that shows. I remember a show she did with Pepin, and she was destemming the spinach for a dish, and Jacques was chiding for that, saying something about how you don't have time for that in a restaurant. I'd say the worst is Nick Stellino. He really lost it for me when he made ravioli by opening up a package of pre-made refrigerated ravioli. |

Be your own person, develop your own style that suites your own tastes. Read everything you can, articles, cookbooks, etc. That should give you ideas... then put the books back on the shelf, gather some quality ingredients and start cooking. Cooking is a process where you are always learning. Because of differences in quality or availability of ingredients, a good cook has to be adaptable.... and adventurous. Never be a slave to a recipe... or the "style" of the latest "chef". YMMV George L |
