Exactly. He/she is not getting the same results with butter as they
would using lard. I'm thinking he/she thinks because both of them are
'greasy' they are producing the same results. Ain't gonna happen.

I know this the same way you probably do--by trying to make pancakes when
you have no oil but butter in the house. I love melty butter on pancakes,
but they have to be fried in hot oil.
