Default Pickled eggs with pics

I like the soft pink color that beet juice gives them. :-)
I know they are done when the white is colored all the way thru.

Pickled egg ingredients:

You've never done pickled eggs with beet juice?
It IS a lot of fun and very easy to do. When the color hits the yolk,
you know they are done. Probably takes less than 7 days, but that's how
long I let them go.

He can be. :-) Here is a pic of him at age 5 munching Sushi. He is 7 now
and still loves it. I want to get some sushi mats and some Nori and
teach him how to make it:

pickle juice with 8 freshly hard boiled eggs (12 minutes at a soft boil).

I'm going to blame you if they do not turn out well in a week, but at
the same time, I'll praise you if they do :-)

Um, I did post it dear.
Mix the dill pickle brine with the canned beet juice, put the eggs in
the jar and stick it in the refrigerator for a week.

QED. ;-) It's not a complicated recipe. I cheat and use that commercial
brine that was in those jars of pickles I bought because I really like
it.

The ratio of brine to beet juice is about 2 parts pickling brine to 1
part beet juice.

I've used that same brine (sans beet) to make pickled Okra pods.
I plan to eventually try it with some young and tender zucchini spears.

I hope you enjoy them. :-) As long as you like the flavor of that
particular pickle brine, they should be fine!

Did you add the beets themselves too? Some people like to pickle those
as well, but I've not tried that yet. I just use the juice as a colorant.

Yes I did. You inspired me to give the pickle brine a shot, and I was at
the end of a pickle jar life-cycle (ate them all), and I had a "can" of
beets in the cupboard, as well as 18 eggs (used eight for pickling), so
I was feeling adventurous given your postings :-) I had only Vlassic But
I'm giving them a chance :-).

I created an Outlook reminder to poke me in a week, to see how well your
suggestion works.

I missed it. I've been coming back here after a couple days away and

Om, I googled the pickled eggs 'recipe' you posted, and saw that you
wanted to look into Claussens recipe.......... don't know if you have yet
or not, so here ya are!!

CLAUSSEN LIKE REFRIGERATOR PICKLES

Part I
3 parts distilled water (important), 1 part distilled white vinegar
(important), for every quart of this mixture add 2 tablespoons of
kosher, non iodized salt (important) in a glass container (important).

Part II
In quart jars put, 1/2 tsp minced dried garlic, 1/4 tsp yellow mustard
seed, 2-4 black peppercorns, 2-4 whole alspice, 1 to 1/2 whole dried
cayenne pepper, a pinch of dill seed, a pinch of dill weed, a
miniscule pinch of turmeric and either 1/4 tsp of sugar or a whole
carrot, washed, sliced (as you like them) cucumbers.

Part III
Now take the brine mixture from Part I and bring it to a boil. Pour
this mixture over the cucumbers and spices in the jars and seal. Put
them in the refrigerator: Ready in 7-10 days. Keeps 8 - 19 weeks.
Brine can be re used.

These look great. I swear girl, you know how to peel eggs.
I've done this with the juice from canned jalapenos also. Makes some
wicked deviled eggs.

Had not looked yet so thanks! :-)
I actually have most of those ingredients on hand including the
distilled vinegar. I use it by the gallon for floor cleaning.

Thanks! I routinely do the room temp aging any more of the raw eggs. :-)
2 to 3 days. It has yet to fail me.

Hm. I've got some fresh jalapenos ripening for Freya the cockatoo. I
