Default OT; Eating Brains

Here in St. Louis, there used to be this place on the Southside that
featured brain sandwiches, but THIS takes the brain eating cake:

You mean the place at Gravois and McKenzie?

I drive right by it every day I go to my morning client, M,W and F!
Yeahm they no longer have that sign that advertized "Brains!"

That is the place.
St. Louis process cheese pizza
Fried bologna and process cheese on white (Wonder type) bread
Boiled hotdogs with hot dog (weenie water) gravy
and the worst, Fried Brain Sandwiches.

Brains are a part of piedmont's "fritto misto", or "mix fry". They are high
in cholesterol but very yummy. This said, mom used to cook brains for me and
my sister when we were toddlers, on recommendation from the pediatrician.

Canned brains scrambled w eggs in the south. As part of the mixed
meat buffet in calf's head at a greek place, goat head from my
kitchen. Never a sandwich , though. I'm imagining something like a
hamburger. Seems a waste to take an interesting thing and make it
ordinary.

Well, the mother in the link in the original post, "apparently ate the
child's brain and some other body parts. She also decapitated the
infant, tore off his face and chewed off three of his toes before
stabbing herself."

They still serve brain sandwiches somewhere along the Mississippi,
because Alton Brown and his crew had them during his program/sojourn
up and down the river.

I believe I ate my last brain sandwich somewhere around the age of 6 or
7 years of age - before we moved to Phoenix, where such delicacies were
unheard of and disgusting. Some 40 years ago. If I were at risk of
BSE-induced illness I suspect I'd be showing symptoms by now.

These days, I wouldn't eat CNS tissue on a bet, nor would I feed it to
my children, unless it were a matter of eat or die *right now*.

Yep. That was a favorite at the taverns frequented by plumbers and
piper fitters prior to the start of their shifts.

Many moons ago, I made my squeamish BIL sick to his stomach by
speculating that a delicious but unidentified breakfast dish at a
Mexican brunch buffet was scrambled eggs and brains... After he'd
wolfed down a large serving.

Every subsequent meal was prefaced by him pointing a fork and me and
stating, "Okay, YOU, just STUF!"

My mother made them as the meat part of a meal when I was a kid. A few
times a year. I didn't care that much for them; I thought they tasted
sweet.

She also made veal kidneys sometimes, which I loved!

My mother's family was German/Romanian. Ah, the memories of food I'll
never eat again.

There's an Italian sauce made of brains.

Sauce Italian

Poach half a calf's brain or the same amount of ox or mutton brain in a
well flavored vinegar court bouillon and allow to cool.

Drain and pass through a fine sieve; place the puree in a basin and
whisk until smooth, and add to it a mayonnaise made form 5 egg yolks, 4
& 1/2 cups oil, the juice of 1 lemon, 1/3 oz. salt and a pinch of
pepper; finish with a good tbs. of chopped parsley.

This sauce is suitable for serving with any kind of cold meat.

Beignets de Cervelle -- Brain fritters

Poach the brains in vinegar court bouillon, remove and cut into thick
slices as evenly shaped as possible.

Marinate with oil, lemon juice and chopped fine herbs for 20 minutes.

Dip in batter and deep fry at the last minute taking care that the
batter becomes very crisp.

Just FYI i have never cooked nor eaten brains
