Maybe I don't get it, not being on a coast where
clams are regularly harvested, but I don't think I've
ever run into the problem. Down here there are fresh
oysters aplenty, but they usually require a little extra
salt and flavoring.

My guess would be "you don't". You just cut back on
adding salt to the dish, but I assume you're going to
put them *in* something. That may be wrong.

Lime juice counteracts saltiness.

I learned that here at r.f.c! It'll depend on quantity, naturally.

I use fresh clams, oysters and mussels a lot and I have never found
any of them to be too salty.

You didn't say whether your fresh clams were already shucked or if
they're still in the shell. If they're still in the shell you can put
them into a pan, bowl or clean bucket full of fresh water overnight
and let them expel some of the sal****er and sand, etc. Personally, I
wouldn't bother.
