Down here there are fresh oysters aplenty, but they usually require a little extra salt and flavoring. My guess would be "you don't". You just cut back on adding salt to the dish, but I assume you're going to put them *in* something. That may be wrong. Alex, Puzzled. |

You didn't say whether your fresh clams were already shucked or if they're still in the shell.
