I'm quite fond of fresh parsley, too, although I usually treat
it as a salad green rather than an herb. Chopped, it perks
up almost anything, including a quickie chicken soup made
from boxed broth.

I wouldn't say "favorite". For most often used, I'd say garlic and
thyme - I'm using oregano more now that I've discovered it is a good
chicken seasoning. Fresh basil is lovely, but I don't use it as
often.

With a nice herb garden in my back yard, I have quite a choice of herbs.
My current favorite is lemon thyme (placed under the chicken skin before
cooking), followed by basil, dill, and chives, etc.

I'm a bit fearful of raw garlic, as much as I love it.

Put me in the hospital for a week in 2005 with pancreatitus. Nearly died.

Or so that's where I laid the blame.

of large-flake finishing salt. Some of the flakes are
1/4 inch across (or more). Fabulous on a steak.
They go crunch when you bite, contrasting nicely

I bought a small jar of red Hawaiian sea salt maybe five years or so ago.
Don't remember why.

I may have used a pinch or two. I don't know what possessed me.

I like it on fried potatoes. Had that at a German restaurant and liked
it. Also spaghetti carbonara.

If we are referring to the most frequently used ONE, I'd have to say
salt free lemon pepper.

Salt and black pepper have to be the ones that I use all the time, to
the extent they are almost considered essentials so probably shouldn't
be part of the discussion. The spice that I'm into at present is
Szechuan pepper

Salt and pepper are probably the most commonly used flavour enhancers.
There are very few dishes that don't benefit from them. I don't know
about you but I use them in just about every savoury dish I prepare, and
in some sweet dishes too. I have lots of herbs and spices that I use in
addition, but I don't use them in everything I make. To have to name one
or two favourites is like having to vote for French wine or California
when there are so many other good ones.

I use Pensey's Herbes de Provence (rosemary, cracked fennel, thyme,
savory, basil, tarragon, dill weed, Turkish oregano, lavender, chervil
and marjoram) on almost everything. Can that be call "A" favorite herb??
