![]() Tuesday I went to the Farmers Mkt. I got some great veggies. Besides these I bought green beans, peaches, avocados, lemons, eggs and lettuce. http://i28.tinypic.com/2a7d7rb.jpg One thing that really caught my eye were the carrots. I can't believe how orange they are. I'm not a fan of cooked carrots. I used to be, but maybe lately I haven't had them cooked right. And, I can't cook them right. I do love raw carrots and I haven't seen any with that color before. Almost like long radishes. |

Carrots come in all colors, shapes, sizes and tastes. You just have to keep trying different kinds to find what you like. We have grown a number of different kinds because they'll grow all year round here in our mild climate. But we have yet to hit upon that perfect combination of looks and taste. -aem |

I know it's a sacrilege, but I always peel carrots before cooking, a lifetime habit inherited from my mother. However, if they're being cooked on their own, I cook them whole over low heat in a tightly covered skillet in just unsalted butter and their own released juices. Regardless of variety, organic or not, I can frequently find deeply orange color carrots in stores like Sprouts or local produce markets. I get some carrots at Soulard's that are traditional in color, but HUGE
in diameter. I developed a stuffed carrot boat recipe that is really good using those. A challenge to hollow out, but the result is so worth the effort. Disturbingly, I cannot find the recipe on my computer. I will have to sort through my scads of notes and as soon as I find it, get in entered. jt |

I bet you could get Andronico's to carry them, and Berkeley Bowl might even have them on the shelves right now. Closer to home, if Nugget or Whole Foods doesn't carry them, you might speak to the produce manager and see if they can acquire them. Carrots seem to me to be the big exception to the rule that salt improves almost everything. If you are accustomed to throwing the automatic pinch of salt into carrots when you cook them, don't. Instead, toss in a pinch of sugar or a short drizzle of honey. I've found that some people think it makes an unexpectedly huge difference. -aem |
