Default Farmers Mkt Carrots


Tuesday I went to the Farmers Mkt. I got some great veggies. Besides
these I bought green beans, peaches, avocados, lemons, eggs and
lettuce.

One thing that really caught my eye were the carrots. I can't believe
how orange they are. They make the carrots I've been buying at the
grocery store look anemic.

In _Vegetables from Amaranth to Zucchini_, Elizabeth Schneider says that if
you want to keep that deep color, it's best to cook the carrots in the
microwave. Steaming, pan-cooking, or roasting all resulted in carrots which
look the same as run-of-the-mill supermarket carrots.

I'm not a fan of cooked carrots. I used to be, but maybe lately I haven't
had them cooked right. And, I can't cook them right. I do love raw carrots
and I haven't seen any with that color before. Almost like long radishes.

If they taste as good as they look you'll want to ask them for the
name of the variety. Carrots come in all colors, shapes, sizes and
tastes. You just have to keep trying different kinds to find what you
like. We have grown a number of different kinds because they'll grow
all year round here in our mild climate. But we have yet to hit upon
that perfect combination of looks and taste. -aem

I've never liked carrots cooked in the microwave. I know it's a sacrilege,
but I always peel carrots before cooking, a lifetime habit inherited from
my mother. However, if they're being cooked on their own, I cook them
whole over low heat in a tightly covered skillet in just unsalted butter
and their own released juices.

Regardless of variety, organic or not, I can frequently find deeply orange
color carrots in stores like Sprouts or local produce markets. They also
seem to be sweeter than the supermarket variety.

Bob, one of the critiques on Amazon says that some commonly used veg are
eliminated from this book, i.e. tomatoes, corn, spinach, bell peppers,
broccoli, celery, and garlic. Can you comment?

I get some carrots at Soulard's that are traditional in color, but HUGE
in diameter. I developed a stuffed carrot boat recipe that is really
good using those. A challenge to hollow out, but the result is so worth
the effort.

Disturbingly, I cannot find the recipe on my computer. I will have to
sort through my scads of notes and as soon as I find it, get in entered.

We've been hitting the Farmer's Market in Puyallup, WA- the veggies
are incredible! I've bought carrots, beets, green beans, raspberries,
peaches, and a few other things. The stuff is so much fresher and
tastier that what you buy at the store, and I like the idea of helping
the "little guys"...

A few years ago, my sister was buying tri-colored carrots at TJ's.
Yellow, Orange, and that color that we called red. They are
apparently different strains of the same veggie, sort of like those
purple and yellow potatoes....

Whatever, bright colors have lots of good carotinoids for yor health,
so enjoy!

I was just reading an article in Sunset magazine about colorful
carrots. There are "yellowstone, "purple haze" and "white satin"
varieties.

Looks like they would make for an interesting presentation.

It's Harvest Grains. I buy it at TJ's. It has Israeli couscous, orzo,
baby garbanzo beans and red quinoa.
I'll keep my eye out for pearl couscous and let you know if I find
some.

Fabulous. And the nearest TJs is virtually next door to the Corti Bros

Yes, it's true. I use the book to get information about *offbeat* produce,
much like I use her earlier work, _Uncommon Fruits & Vegetables_. I have
hundreds of other books with recipes for broccoli; this and her other book
are the ones I pull down when I need a recipe for something like sapote or
tamarillo.

I've only seen them on trips to San Diego. I bet you could get Andronico's
to carry them, and Berkeley Bowl might even have them on the shelves right
now. Closer to home, if Nugget or Whole Foods doesn't carry them, you might
speak to the produce manager and see if they can acquire them.

Is it the texxture of cooked carrots that is putting you off, or the
way the taste changes from raw to cooked? If the former I have no
help. If the latter, consider this. Carrots seem to me to be the big
exception to the rule that salt improves almost everything. If you
are accustomed to throwing the automatic pinch of salt into carrots
when you cook them, don't. Instead, toss in a pinch of sugar or a
short drizzle of honey. I've found that some people think it makes an
unexpectedly huge difference. -aem
