All good things come to an end

or a core

Why should cabbages be any different

Suppose they are/aren't

Does that mean the woody stump leftover after you've eaten the
leaves is rich in nutrient goodies

or not?

The cabbage stalk on my kitchen table awaits its fate......

So Sorry, but the stem is delicious. These are cole crops,
and the interior of the stalk is same-same kohlrabi.

Peel off the hard exterior, dice the interior, serve as a part of
salads, or saute with chicken, or add to soups.

I dip it in salt and eat it raw.

The core is delicious trimmed and steamed.
There is no reason not to eat it.

Cabbage cores are delicious. Dad watched me quartering a cabbage this
afternoon for steaming, and slicing out the core.

He immediately grabbed the core quarters and prepped them for himself as
a treat. :-)

Peel, steam, slice and serve with a little salt.
