I'm torn what to make for dinner.
I have a package of ricotta about to pass its use by date. I want this: http://www.alacartetv.com/html/lidia...st_chokers.htm I have some little smokies and a couple packages of biscuits. I want to make pigs-in-a-blanket. I have a 3-4 lb package of chicken breasts thawing. Chicken is always good. Anyone ever have days like this? -- Yours, Dan S. (In that sense, I have many days like this). You have too much factory food. Packages of biscuits? And the breast is the most expensive and lest tasty part of the bird. But you have it and it is food so eat it. I can imagine a tasteless slab of breast wrapped around a spice and nitrate infused smokey, wrapped with stale cheese (but cheese doesn't really go bad), wrapped with some Poppin' Fresh stuff (flour costs almost nothing, dude). Throw some spinach in there , some spice depending what in your smokey. Maybe a vegetable or pickle. Chile? After a couple of beers this might taste good, but I think at that point the best part would be the grease from the sausage. |

After reading the ricotta recipe, I noticed that it takes a day to strain the cheese, so I went with the pigs in a blanket with home made biscuits (as I was actually out of the Grands (and you can't say you can make a better biscuit than Grands - I wouldn't believe you w/o a recipe)). Also, a plain chicken breast pounded out and cooked plain with garlic infused olive oil and salt/pepper - deglazed with chicken base or white wine and served with some type of starch is great.
