Default caprese salad

One of my favorite summer time treats has been lunch for two days
now. I'm out of fresh tomatos, so moderation will reign tomorow. I
probably would tire of this eventually if good tomatos were always
available. In the meantime, I'm celebrating the season!

Mookie - I also regret the end of the growing season. I love a good tomato.

After season, I will often use plum tomatoes in recipes or sandwiches as
they often times have the flavor needed for a good tomato, if the others
are not available.

We've got so many tomatoes that I've been leaving baskets of them, and
bouquets of basil, in the teacher's lounges of the schools where I work.
I also passed a bag of them over the fence to the guys rebuilding the
neighbor's deck. They thanked me, asked for the loan of a salt shaker
and ate them sitting in the shade on their break.

That's my favorite way to eat fresh tomatoes. It's edible with good
store bought tomatoes but disappointing, a mere shadow of the real thing.

I was getting a bit tired of the Caprese combination. Tonight's dinner was a
salad with tomatoes and basil, but far divorced from Caprese! The salad had
lettuce, arugula, tuna, heirloom tomatoes, basil, cilantro, toasted almonds,
and toasted pumpkin seeds. The dressing was made with white wine vinegar,
olive oil, salt, and pepper.

Lin made it, and it was yummy.

Yesterday, we got 3 pounds of tomatoes and a huge bunch of basil from
the CSA (among other things).

If you've od'd on Caprese, you could make the basics of pesto (can;t
remember if your gang likes it or not) and freeze it for later.
