And even though a restaurant is very successful doesn't automatically mean it's showing a profit, many notable people who obtain their wealth elsewhere purposely choose eateries as a tax shelter and because they enjoy the fame that goes with seeing their name in lights. Naturally a restaurant that doesn't need to show a profit can offer much more ambiance and a better location than one that needs to stay in the black. I know from personal experience and because food is highly perishable that it's very difficult to operate a restaurant at a profit, it's very lucky to barely stay above water, most fail... in the US only one out of seven lasts the first year. Most folks judge a restaurant on the amenities first and the food last... anyone can cook a better steak on their home grill. Many chain restaurants produce higher quality with more consistancy than highly rated restaurants but no one notices because they are blinded by the flash in the pan... most folks who dine at fancy schmancy eateries only remember the appetizers and desserts. If you don't order an appetizer, dessert, and drinks as far as the restaurant ledger is concerned they took a loss... even McD's operates at a loss when folks don't order the fries and a drink http://www.channel4.com/food/recipes...gordon-ramsay/ |

It's a Brit lasagna. You know if those Little Italy versions were served here in Italy no one would want to eat them. That's not a yardstick worth using. |
